Caramel Apple Cheesecake

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream

For the Apple Topping:

  • 3 cups peeled and diced apples (use Granny Smith or Honeycrisp)
  • 1/3 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice

For the Caramel Sauce:

  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

Prepare the Crust:
Preheat your oven to 325°F. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan, spreading it evenly to form the crust. Bake for 10 minutes, then set aside to cool.

Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and vanilla extract and mix until well combined. Add the eggs one at a time, mixing after each addition. Stir in the sour cream until smooth. Pour the cheesecake batter over the prepared crust.

Prepare the Apple Topping:
In a medium skillet over medium heat, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the apples are slightly softened. Allow the mixture to cool slightly, then spread it evenly over the cheesecake filling.

Bake the Cheesecake:
Place the springform pan on a baking sheet to catch any drips. Bake the cheesecake for 60–70 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Remove and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Add the Caramel Sauce:
Before serving, drizzle the caramel sauce over the top of the cheesecake. Slice and serve chilled.
