Preparing the Crust
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until crumbly and press into a pie dish, creating an even crust across the bottom and up the sides.
Making the Cookie Dough
- In another bowl, cream together brown sugar and melted butter.
- Mix in flour, baking soda, and vanilla extract until well combined.
- Fold in the chocolate chips.
Assembling the Pie
- Spread the cookie dough over the prepared crust, ensuring an even layer.
- Bake for around 25-30 minutes or until the edges are golden brown yet the center remains soft.
Adding the Toppings
- Once out of the oven, sprinkle mini marshmallows liberally over the top.
- Use a kitchen torch or put it back in the oven under the broiler for just a couple of minutes, until the marshmallows are puffed and golden.
Cooling and Serving
- Allow the pie to cool slightly before slicing.
- Serve it warm for the best experience, and feel free to drizzle extra chocolate on top for an added touch!
