These Leftover Mashed Potato Cheese Puffs are the perfect way to reinvent last night’s mashed potatoes into a golden, cheesy delight.

Ingredients
  

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 2 tablespoons chopped green onions
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Optional: a sprinkle of garlic powder or paprika for added flavor

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the mashed potatoes, shredded cheese, eggs, green onions, and breadcrumbs. Mix well.
  3. Scoop out portions of the mixture and place them on the baking sheet.
  4. Bake for 20-25 minutes until golden brown and crispy.
