  • 1 medium head chopped cabbage
  • 1 pound ground beef or turkey
  • 1 cup onion, chopped
  • 2 cups cooked rice Can use leftover rice.
  • 1 can diced tomatoes (14.5 ounces) Drain excess liquid for firmer casserole.
  • 1 cup shredded cheese (cheddar or your choice) Generously layer on top.
  • to taste Salt and pepper
  • 1 tablespoon olive oil For sautéing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 3-4 minutes).
  3. Add the ground beef or turkey, season with salt and pepper, and cook until browned, approximately 5-7 minutes.
  4. While the meat is cooking, chop the cabbage into bite-sized pieces.
  5. Once the meat is browned, stir in the cooked rice and diced tomatoes. Gently fold in the chopped cabbage until well mixed.
Baking
  1. Spread the cabbage mixture evenly in a large baking dish. Top with shredded cheese.
  2. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  3. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
Serving
  1. Allow to cool slightly before serving. Enjoy with your family!

Notes

For a vegetarian option, substitute ground meat with a mix of vegetables. This casserole freezes well; store in an airtight container for up to 4 days in the fridge or 3 months in the freezer. Reheat in the oven at 350°F (175°C) for about 25-30 minutes.
