  • 1 cup rolled oats
  • ½ cup almond butter (or sunflower seed butter for nut-free) Substitutes for nut-free options.
  • cup honey or maple syrup Use maple syrup for a vegan option.
  • 1 cup fresh or frozen raspberries, mashed
  • ½ cup shredded unsweetened coconut
  • 1 tsp vanilla extract
  • a pinch salt

Method
 

Preparation
  1. In a medium-sized bowl, combine the rolled oats, shredded coconut, and salt. Stir well to evenly distribute the ingredients.
  2. In a separate bowl, mix the almond butter, honey or maple syrup, and vanilla extract. Stir until you achieve a smooth mixture.
  3. Pour the wet mixture into the dry ingredients and gently fold in the mashed raspberries. Mix until everything is well combined.
  4. Take small portions of the mixture and roll them into balls about 1 inch in diameter. If the mixture is too sticky, rub a little coconut oil on your hands.
  5. Place the formed energy balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  6. Once chilled, enjoy your energy balls right away or store them for later.

Notes

Customize by swapping raspberries for blueberries or strawberries. Add nuts for crunch or more almond butter for chewiness. Store in an airtight container in the fridge for up to a week, or freeze for up to three months.
