Ingredients

Main Ingredients
  • 8 oz noodles (your choice)
  • 1 cup rotisserie chicken, shredded
Sauce Ingredients
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup soy sauce Ensure gluten-free options if needed
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 1 clove garlic, minced
Garnish and Optional Ingredients
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts For garnish
  • lime wedges Optional
  • fresh vegetables (like bell peppers or carrots) Optional

Method

Cooking Noodles
  1. Bring a large pot of water to boil and cook the noodles according to the package instructions. Once done, drain and set aside. Save about half a cup of the pasta water in case you need to adjust the sauce's consistency later.
Preparing Sauce
  1. In a mixing bowl, combine the peanut butter, soy sauce, honey, sesame oil, and minced garlic. Stir until well blended. If the sauce seems too thick, add a bit of the reserved pasta water to achieve your desired consistency.
Combining Ingredients
  1. In a large mixing bowl, combine the cooked noodles and shredded rotisserie chicken. Pour the peanut sauce over and mix until everything is evenly coated.
Adding Vegetables
  1. If you’re using vegetables, toss them in now. Fresh bell peppers or shredded carrots add a lovely crunch and vibrant color.
Serving
  1. Dish out the noodles onto individual plates. Top with chopped green onions and peanuts for an extra crunch. Add lime wedges on the side for a zesty finish.

Notes

If using tahini instead of peanut butter, it provides a different flavor profile but remains creamy and nutty. Make sure to prepare the noodles al dente to avoid mushiness. Ensure you coat everything evenly for maximum flavor.
