  • 1 pound scallops Choose fresh and firm scallops.
  • 2 tablespoons butter Divided usage for cooking and sauce.
  • 2 tablespoons olive oil Used for searing scallops.
  • 1 lemon lemon juice and zest Adds brightness and flavor.
  • 2 cloves garlic Minced for sauce.
  • Salt and pepper to taste For seasoning.
  • Fresh parsley For garnish.

Method
 

Preparation
  1. Pat scallops dry with a paper towel to remove excess moisture.
Cooking
  1. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat until shimmering.
  2. Place scallops in the skillet without crowding. Sear for 2-3 minutes until golden crust forms. Season with salt and pepper, then flip and cook for another 2-3 minutes.
  3. Remove scallops from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  5. Add the remaining butter, lemon juice, and zest, stirring until melted and combined.
  6. Return scallops to the skillet, tossing lightly in the sauce, then garnish with freshly chopped parsley and serve warm.

Notes

For perfect scallops, choose fresh ones, avoid overcrowding the pan, and do not overcook them.
