Preparation
- Finely dice the bell pepper, shred the carrot, and mince the garlic and ginger.
Cooking
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the ground turkey to the skillet and cook until it’s fully browned, breaking it apart with a spoon to ensure even cooking (about 5-7 minutes).
- Once the turkey is cooked, toss in the bell pepper, shredded carrot, garlic, and ginger. Stir well and cook for another 2-3 minutes to soften the veggies.
- Pour in the soy sauce, stirring to combine all the flavors and allow to cook for an additional minute.
Serving
- Remove the skillet from the heat and let the mixture cool slightly.
- Scoop a generous amount of the turkey mixture onto a lettuce leaf, top with green onions, and optional peanuts or sriracha, then enjoy.
Notes
Substitute ground turkey with chicken or beef. Prepare ahead and store in the fridge. Ensure vegetables are finely chopped for a delightful crunch.
