  • 4 large onions, thinly sliced Sweet onions like Vidalia or Walla Walla work best.
  • 4 tablespoons butter (unsalted) For caramelizing the onions.
  • 1 teaspoon sugar To help caramelize the onions.
  • 1 teaspoon salt For seasoning.
  • 8 cups beef broth (or vegetable broth for a vegetarian option) Base for the soup.
  • 1/2 teaspoon dried thyme For flavoring.
  • Freshly ground black pepper to taste For seasoning.
  • 1 baguette sliced for toasting For serving.
  • 2 cups shredded Gruyère cheese (or Swiss cheese) For topping the soup.

Method
 

Preparation
  1. In a large pot, melt butter over medium heat.
  2. Add the sliced onions, sugar, and salt. Cook for 20-30 minutes, stirring frequently, until the onions are golden brown and caramelized.
Cooking
  1. Stir in the thyme, black pepper, and beef broth. Bring the mixture to a boil, then reduce to a simmer.
  2. Allow to cook for an additional 30 minutes to let the flavors meld.
Assembly
  1. While the soup simmers, toast the baguette slices in the oven until golden brown.
  2. Ladle the soup into oven-safe bowls. Top each bowl with toasted baguette slices and generously sprinkle cheese on top.
Finishing Touch
  1. Place the bowls on a baking sheet and broil them in the oven until the cheese is bubbly and golden, about 2-3 minutes.
Serving
  1. Remove from the oven, let cool slightly, and enjoy your bowl of homemade French Onion Soup!

Notes

If you have leftovers, store the soup in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stove, adding broth to maintain consistency.
