Easy White Chicken Chili is the ultimate comfort meal, filled with tender chicken, creamy beans, and a touch of spice that brings everything together in a warm, hearty bowl.

Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 can 4 oz diced green chilies
  • 2 cans 15 oz each white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 4 oz cream cheese softened
  • Fresh cilantro chopped (for garnish)
  • Optional toppings: shredded cheese diced avocado, tortilla chips, lime wedges

Method
 

  1. Add Ingredients to Slow Cooker: Place the chicken breasts, chopped onion, garlic, green chilies, white beans, chicken broth, cumin, oregano, garlic powder, salt, and pepper into the slow cooker.
  2. Cook the Chili: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  3. Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker, shred it using two forks, and return it to the slow cooker.
  4. Add Cream Cheese and Sour Cream: Add the softened cream cheese and sour cream to the slow cooker, stirring until they’re melted and the chili is creamy. Let the chili cook on low for an additional 10-15 minutes to blend the flavors.
  5. Serve and Garnish: Ladle the chili into bowls and garnish with fresh cilantro and any of your favorite toppings.
