  • 1 cup milk (or your favorite dairy alternative) Almond, soy, or oat milk can be used.
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional) Honey can be a natural substitute.
  • 1/4 cup yogurt (optional) Add for creaminess.

Method
 

Preparation
  1. In a mixing bowl, combine the rolled oats, milk, pumpkin puree, pumpkin pie spice, vanilla extract, and maple syrup (if using). Stir until everything is well mixed and creamy.
  2. Taste your mixture. If you like it sweeter, add a bit more maple syrup or adjust the spices to your preference.
  3. Divide the mixture into two or more airtight containers for easy serving.
  4. Seal the containers and refrigerate. Let them chill overnight or for at least 4 hours to allow the oats to absorb the liquid and spices.
  5. In the morning, stir your oats, add a dollop of yogurt if desired, and top with chopped nuts or seeds for extra crunch. Enjoy your delicious breakfast!

Notes

These overnight oats can be kept in the fridge for up to 5 days. Stir before serving as ingredients may settle. To enjoy warm, microwave for 30 seconds to a minute and add a splash of milk.
