Ingredients
  

For the Apricot Mixture
  • 2 cups apricots, diced (fresh or canned without syrup) Fresh apricots should be washed and pitted
  • 1 cup brown sugar Adds sweetness and caramel notes
  • 1 tablespoon lemon juice Enhances flavor
  • 1/2 teaspoon cinnamon Optional, adds spice
For Serving
  • 2 cups vanilla ice cream Ensure it’s halal-friendly
  • 1 cup heavy cream Optional for additional creaminess

Method
 

Preparation
  1. Wash fresh apricots thoroughly and remove the pits. Dice them into small pieces.
  2. If using canned apricots, drain them well.
Cooking
  1. In a medium saucepan, combine the diced apricots, brown sugar, and lemon juice over medium heat.
  2. Stir gently to dissolve the sugar and allow to simmer for 5-7 minutes until the apricots are soft and syrupy.
  3. If using cinnamon, sprinkle it in now and mix well, then remove from heat.
Assembly
  1. In serving bowls, add generous scoops of vanilla ice cream.
  2. Pour the warm apricot mixture over the ice cream to create a contrast of temperatures.
  3. If using heavy cream, whip it until stiff peaks form and dollop it on top before serving.
  4. Optionally garnish with a sprinkle of cinnamon or fresh mint leaves.

Notes

Substitute apricots with peaches or nectarines if out of season. Ensure not to rush cooking apricots for best flavor.
