Preparation
- Wash fresh apricots thoroughly and remove the pits. Dice them into small pieces.
- If using canned apricots, drain them well.
Cooking
- In a medium saucepan, combine the diced apricots, brown sugar, and lemon juice over medium heat.
- Stir gently to dissolve the sugar and allow to simmer for 5-7 minutes until the apricots are soft and syrupy.
- If using cinnamon, sprinkle it in now and mix well, then remove from heat.
Assembly
- In serving bowls, add generous scoops of vanilla ice cream.
- Pour the warm apricot mixture over the ice cream to create a contrast of temperatures.
- If using heavy cream, whip it until stiff peaks form and dollop it on top before serving.
- Optionally garnish with a sprinkle of cinnamon or fresh mint leaves.
Notes
Substitute apricots with peaches or nectarines if out of season. Ensure not to rush cooking apricots for best flavor.
