Main Ingredients
  • 1 lb sausage (Italian or smoked, Halal compliant) Choose your preferred type of sausage.
  • 1 cup lentils (dry) Any variety of lentils can work, but green lentils hold their shape best.
  • 1 onion (chopped)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 4 cloves garlic (minced)
  • 6 cups vegetable or chicken broth Use low-sodium for a healthier option.
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp thyme
  • 1 tsp cumin
  • to taste Salt and pepper
  • 2 cups kale or spinach (optional) Add for extra nutrition and color.

Method
 

Preparation
  1. Start by chopping the onions, carrots, and celery. Mince the garlic and set everything aside.
Cooking the Sausage
  1. In a separate skillet, brown your Halal sausage over medium heat for about 5-7 minutes until nicely cooked.
Combining Ingredients
  1. In your crockpot, add the lentils, diced tomatoes, chopped vegetables, garlic, thyme, cumin, and salt and pepper. Pour in the broth and give it a gentle stir.
  2. Carefully add the browned sausage to the mixture.
Cooking the Soup
  1. Cover your crockpot and set it on low for 6-8 hours or high for 4 hours.
Finishing Touch
  1. About 30 minutes before serving, stir in your kale or spinach.
Serving
  1. Once cooked, taste and add any additional salt and pepper as needed. Ladle the soup into bowls and garnish as desired.

Notes

For substitutions, consider Halal turkey or chicken sausage for a lighter option. Use pre-chopped vegetables to save time.
