Prepare the Meat:
Season the chuck roast generously with salt, pepper, garlic powder, and onion powder. If desired, sear the meat in a hot skillet with a little oil to lock in flavor.
Assemble in the Crockpot:
Place the sliced onions and bell peppers in the bottom of the crockpot. Add the seasoned chuck roast on top.
Add the Liquids and Seasoning:
Pour in the beef broth and Worcestershire sauce. Add the minced garlic and Italian seasoning.
Cook Low and Slow:
Cover the crockpot and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender and easily shredded.
Shred the Beef:
Use tongs or a fork to shred the beef directly in the crockpot. Mix it well with the onions, peppers, and juices.
Assemble the Sandwiches:
Preheat your oven to broil. Slice the hoagie rolls and place them on a baking sheet. Fill each roll with the beef mixture and top with a slice of provolone cheese.
Melt the Cheese:
