Method
Preparation of Chicken
- Start by seasoning the chicken breasts with salt and pepper.
- In a skillet over medium heat, add a splash of olive oil and sear the chicken on both sides until golden brown, about 5-7 minutes per side. Ensure they are cooked through (165°F internal temperature).
- Remove the chicken from the skillet and set aside.
Create the Sauce
- In the same skillet, add the minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
- Pour in the chicken broth and scrape any browned bits from the bottom of the pan for added flavor.
Adding Creaminess
- Lower the heat and whisk in the heavy cream along with the lemon zest and juice.
- Let the sauce simmer for 2-3 minutes, allowing it to thicken. Season with salt and pepper to taste.
Combine Chicken and Sauce
- Return the chicken breasts to the skillet, spooning the creamy sauce over them.
- Let everything meld together for another 2-3 minutes.
Garnish and Serve
- Once everything is heated through, garnish with fresh parsley and serve with your choice of sides.
- Enjoy!
Notes
For a lower-fat version, use half-and-half instead of heavy cream. Be careful to avoid overcooking the chicken for the best texture. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat gently on the stovetop.
