  • 1 cup heavy cream
  • 1/4 cup chicken broth Use gluten-free broth if needed.
  • 1 piece lemon Zested and juiced.
  • 2 cloves garlic Minced.

Method
 

Preparation of Chicken
  1. Start by seasoning the chicken breasts with salt and pepper.
  2. In a skillet over medium heat, add a splash of olive oil and sear the chicken on both sides until golden brown, about 5-7 minutes per side. Ensure they are cooked through (165°F internal temperature).
  3. Remove the chicken from the skillet and set aside.
Create the Sauce
  1. In the same skillet, add the minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
  2. Pour in the chicken broth and scrape any browned bits from the bottom of the pan for added flavor.
Adding Creaminess
  1. Lower the heat and whisk in the heavy cream along with the lemon zest and juice.
  2. Let the sauce simmer for 2-3 minutes, allowing it to thicken. Season with salt and pepper to taste.
Combine Chicken and Sauce
  1. Return the chicken breasts to the skillet, spooning the creamy sauce over them.
  2. Let everything meld together for another 2-3 minutes.
Garnish and Serve
  1. Once everything is heated through, garnish with fresh parsley and serve with your choice of sides.

Notes

For a lower-fat version, use half-and-half instead of heavy cream. Be careful to avoid overcooking the chicken for the best texture. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat gently on the stovetop.
