Coffee Cake Cookies

Coffee Cake Cookies are soft, cake-like cookies inspired by the flavors of classic coffee cake, featuring a cinnamon-spiced dough, a buttery streusel topping, and a light glaze drizzle.

Ingredients
  

  • Cookie Dough
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Streusel Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons melted unsalted butter
  • Glaze
  • 1/2 cup powdered sugar
  • 1 –2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Equipment

  • Mixing Bowls – For dough and streusel mixing.
  • Baking Sheets – To bake the cookies.
  • Parchment Paper – For non-stick baking and easy cleanup.
  • Electric Mixer – To cream butter and sugar.
  • Whisk – To make the glaze.

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make streusel topping: mix flour, brown sugar, and cinnamon, then add melted butter until crumbly.
  3. Cream butter, sugars; add egg, vanilla, and sour cream.
  4. Mix dry ingredients; add to wet mixture.
  5. Scoop dough, press, top with streusel.
  6. Bake 10–12 minutes; cool.
  7. Glaze with powdered sugar mix.
