  • 2 pieces boneless, skinless chicken breasts Seasoned with salt and pepper
For the spread
  • 1 cup refried beans Blended with lime juice
  • 1 tablespoon lime juice Adds a zesty twist
For the sandwich assembly
  • 4 pieces bolillo rolls or sandwich rolls Can be heated if desired
  • 1 piece avocado, sliced Fresh and ripe
  • 1/2 cup lettuce, shredded Crisp and fresh
  • 1 piece tomato, sliced Use a ripe tomato
  • 1/4 cup mayonnaise For spreading
  • to taste Salt and pepper Season according to preference
  • to taste Pickled jalapeƱos Optional for added heat

Method
 

Preparation
  1. Season your chicken breasts with salt and pepper.
  2. Heat a non-stick skillet over medium heat and cook the chicken for about 7-8 minutes on each side or until fully cooked and no longer pink in the center.
  3. While the chicken is cooking, take a small bowl and blend the refried beans with lime juice to add a zesty twist.
Assembly
  1. Once the chicken is cooked, let it rest for a few minutes. Slice it thinly for easy layering.
  2. Heat the bolillo rolls slightly if desired, then spread a generous amount of refried beans on each roll.
  3. Layer the sliced chicken over the beans. Top it off with lettuce, tomatoes, avocado slices, and a drizzle of mayonnaise.
  4. For those who crave a little heat, add some pickled jalapeƱos.
  5. Close the sandwich, press it a little down, and get ready for a mouthwatering experience!

Notes

You can substitute grilled turkey or chickpeas instead of chicken for a delightful vegetarian version. Make sure to let your chicken rest a couple of minutes before slicing to retain moisture. Avoid overcooking the chicken; it should be juicy and tender.
