  • 2 cups cooked chicken, shredded or diced Ensure it is Halal compliant.
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets, steamed or blanched
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can cream of chicken soup (ensure Halal certified)
  • ½ cup milk (you can use non-dairy alternatives)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper
  • 1 cup breadcrumbs (optional for topping)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli. Mix gently to distribute evenly.
  3. In a separate bowl, whisk together cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the sauce over the chicken, rice, and broccoli mixture and stir well until everything is coated.
  5. Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
Baking
  1. Sprinkle shredded cheese over the top and add breadcrumbs if using.
  2. Cover with aluminum foil and bake for 30 minutes.
  3. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
Serving
  1. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to two months. Reheat at 350°F (175°C) for about 20-25 minutes.
