Ingredients
  

Dry Ingredients
  • 2 cups whole wheat flour
  • 1 cup protein powder (vanilla or unflavored)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1/4 cup coconut oil or butter, melted
  • 1/4 cup honey or maple syrup
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips or dried fruit For added flavor

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the whole wheat flour, protein powder, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the melted coconut oil (or butter), honey (or maple syrup), milk, and vanilla extract until smooth.
  4. Pour the wet ingredient mixture into the dry mixture. Stir gently until just combined. Fold in chocolate chips or dried fruit if desired.
  5. Using a spoon or a cookie scoop, drop dollops of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-20 minutes until the biscuits are golden brown and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.

Notes

For perfect biscuits, don't overmix the dough. Experiment with different flavorings like cinnamon or nutmeg, and add chia or flax seeds for extra nutrition. Store cooled biscuits in an airtight container for up to 3 days.
