  • 2 cups cooked chicken, shredded Use leftover, rotisserie, or boiled chicken.
  • 2 cups marinara sauce
  • 2 cups cooked pasta (like penne or rotini) Cooked until al dente.
  • 1 cup mozzarella cheese, shredded For topping.
  • 1/2 cup Parmesan cheese, grated Divided into two portions.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Breadcrumbs for topping Use as desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook and shred the chicken if not using pre-cooked chicken.
  3. Cook the pasta according to package instructions until al dente, then drain.
Mixing and Baking
  1. In a large bowl, combine shredded chicken, marinara sauce, cooked pasta, mozzarella cheese, 1/4 cup Parmesan cheese, Italian seasoning, salt and pepper. Mix well.
  2. Transfer the mixture into a greased 9x13-inch baking dish, spreading evenly.
  3. Sprinkle remaining Parmesan cheese and breadcrumbs over the top.
  4. Bake for about 30 minutes, until cheese is melted and bubbly, and the top is golden brown.
  5. Let cool slightly before serving. Enjoy your casserole!

Notes

You can substitute chicken with turkey or a vegetarian protein. Refrigerate leftovers for up to 3 days or freeze for 3 months. Reheat covered at 350°F until warmed through.
