  • 4 pieces salmon fillets (about 6 ounces each)
  • 1 cup grated parmesan cheese
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh parsley (chopped) or 1 teaspoon dried
  • 1 teaspoon dried thyme or 1 tablespoon fresh
  • to taste salt and black pepper
  • slices lemon (for serving)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Tear off a large piece of aluminum foil and lay it flat on a baking sheet.
  3. In a small bowl, combine the grated parmesan cheese, minced garlic, olive oil, parsley, thyme, salt, and black pepper. Stir well until everything is nicely combined.
  4. Place your salmon fillets on the foil with skin side down. Generously spread the parmesan mixture over each fillet.
  5. Fold the sides of the aluminum foil over the salmon to create a sealed packet, ensuring it's tightly secured.
  6. Place the foil packet in the preheated oven and bake for about 20-25 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Carefully unwrap the foil, add lemon slices on top, and enjoy!

Notes

For best results, make sure to seal the foil properly; a loose envelope can dry out the salmon. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
