  • 3 medium medium zucchinis Grated, approximately 2 cups.
  • 1 cup breadcrumbs Can use whole wheat or gluten-free.
  • 1/2 cup finely chopped onion Adds flavor and texture.
  • 2 cloves garlic Minced for better incorporation.
  • 1 large egg Acts as a binder.
  • 1/2 cup grated cheese Mozzarella or cheddar works well.
  • 1 tsp salt Enhances flavor.
  • 1/2 tsp black pepper For seasoning.
  • 1 tsp ground cumin Provides a warm flavor.
  • 1/2 tsp paprika For color and taste.
  • 2-3 tbsp olive oil For frying.

Method
 

Preparation
  1. Grate the zucchinis using a box grater, then squeeze them using a clean kitchen towel to remove excess moisture.
  2. In a large bowl, combine the grated zucchini, breadcrumbs, chopped onion, minced garlic, egg, grated cheese, salt, black pepper, cumin, and paprika. Mix until all ingredients are well blended.
  3. Shape the mixture into small, round patties, about 2-3 inches in diameter.
Cooking
  1. In a non-stick frying pan, heat 2-3 tbsp of olive oil over medium heat.
  2. Add the patties to the pan, ensuring they are not overcrowded. Fry for about 3-4 minutes on each side or until they are golden brown.
  3. Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil.
  4. Serve hot with your favorite dipping sauce or on a bed of fresh salad.

Notes

For variations, consider substituting almond flour for breadcrumbs for a lighter option. Keep an eye on the patties while frying to prevent burning. Ensure to remove excess moisture from the zucchini for optimal texture.
