  • 4 fillets cod fillets (about 6 ounces each)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 juice Juice of 1 lemon
  • 1 zest Zest of 1 lemon
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, minced garlic, lemon juice, and lemon zest.
  3. Pat the cod fillets dry with a paper towel and place them in a greased baking dish. Season with salt and pepper.
  4. Pour the lemon garlic marinade evenly over the cod fillets.
Baking
  1. Place the baking dish in the preheated oven and bake for 15-20 minutes or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Garnishing
  1. Once cooked, remove the cod from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave, being careful not to overcook.
