Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, and lemon zest.
- Pat the cod fillets dry with a paper towel and place them in a greased baking dish. Season with salt and pepper.
- Pour the lemon garlic marinade evenly over the cod fillets.
Baking
- Place the baking dish in the preheated oven and bake for 15-20 minutes or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Garnishing
- Once cooked, remove the cod from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave, being careful not to overcook.
