Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 lemons lemon zest Freshly grated for maximum flavor
Wet Ingredients
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup lemon juice Freshly squeezed for best taste
Optional Glaze
  • 1/4 cup powdered sugar For glaze, if desired

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and lemon zest until well combined.
  3. In another bowl, mix the heavy cream, egg, vanilla extract, and lemon juice until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined, being careful not to overmix.
  5. Turn the dough out onto a lightly floured surface, gently pat it into a circle about 1 inch thick, then cut into wedges or use a biscuit cutter.
Baking
  1. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown on top.
Glazing (Optional)
  1. Mix powdered sugar with a little lemon juice to create a glaze and drizzle over cooled scones.

Notes

For best results, use fresh lemons. Chill the dough for 30 minutes if possible before baking.
