Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and lemon zest until well combined.
- In another bowl, mix the heavy cream, egg, vanilla extract, and lemon juice until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined, being careful not to overmix.
- Turn the dough out onto a lightly floured surface, gently pat it into a circle about 1 inch thick, then cut into wedges or use a biscuit cutter.
Baking
- Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown on top.
Glazing (Optional)
- Mix powdered sugar with a little lemon juice to create a glaze and drizzle over cooled scones.
Notes
For best results, use fresh lemons. Chill the dough for 30 minutes if possible before baking.
