Ingredients
  

Main Ingredients
  • 8 oz uncooked pasta (Rotini or Bow Tie)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup Kalamata olives, pitted and sliced
  • 1 small red onion, finely chopped
  • 1 cup feta cheese, crumbled
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water until cooled.
  2. While the pasta is cooking, prep your vegetables. Halve the cherry tomatoes, dice the cucumber, slice the olives, and chop the red onion.
  3. In a small bowl or jar, combine olive oil, lemon juice, dried oregano, salt, and pepper. Whisk or shake until well combined.
Assembly
  1. In a large mixing bowl, add the cooled pasta, vegetables, and feta cheese. Pour the dressing over the top.
  2. Gently toss all the ingredients together until well combined. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for an hour for the flavors to meld.

Notes

Make this salad a few hours ahead of time for the best flavor. Feel free to customize with seasonal produce or fresh herbs.
