Preparation
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water until cooled.
- While the pasta is cooking, prep your vegetables. Halve the cherry tomatoes, dice the cucumber, slice the olives, and chop the red onion.
- In a small bowl or jar, combine olive oil, lemon juice, dried oregano, salt, and pepper. Whisk or shake until well combined.
Assembly
- In a large mixing bowl, add the cooled pasta, vegetables, and feta cheese. Pour the dressing over the top.
- Gently toss all the ingredients together until well combined. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for an hour for the flavors to meld.
