This Easy Instant Pot Green Beans with Potatoes recipe is a simple and comforting side dish made with tender green beans and perfectly cooked potatoes. It comes together quickly in the Instant Pot, making it ideal for busy weeknights, holiday dinners, or family meals.

Ingredients
  

  • 500 g fresh green beans trimmed
  • 600 g baby potatoes halved
  • 240 ml vegetable broth
  • 30 ml olive oil
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 15 ml lemon juice optional
  • 15 g chopped fresh parsley optional

Method
 

  1. Wash and trim the green beans. Halve the baby potatoes if they are large.
  2. Pour the vegetable broth into the Instant Pot.
  3. Add the potatoes, followed by the green beans.
  4. Drizzle with olive oil and sprinkle with the minced garlic, salt, black pepper, and dried thyme.
  5. Secure the lid and set the valve to the sealing position.
  6. Cook on High Pressure for 4 minutes.
  7. Perform a quick pressure release once the cooking time is complete.
  8. Carefully open the lid and gently stir the vegetables.
  9. Add the lemon juice and fresh parsley, if desired.
  10. Serve warm as a delicious side dish.

Notes

Baby Yukon Gold or red potatoes work especially well in this recipe.
Frozen green beans can be used if fresh are unavailable.
Adjust the seasoning to your taste before serving.
For extra flavor, sprinkle with grated Parmesan cheese or add a small pat of butter after cooking.
Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat before serving.
