Vegetables and Aromatics
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup spinach, chopped
Liquids and Seasoning
  • 4 cups vegetable broth
  • 14.5 ounces diced tomatoes, undrained
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are tender.
  3. Stir in the garlic and cook for an additional minute until fragrant.
  4. Pour in the vegetable broth along with the diced tomatoes (including their juice), potatoes, green beans, thyme, salt, and black pepper.
  5. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes, or until the potatoes are soft.
  6. Stir in the chopped spinach and let it wilt for about 2 minutes. Taste and adjust seasonings if necessary.
  7. Ladle the soup into bowls, add your favorite toppings, and enjoy the warmth!

Notes

Feel free to swap out vegetables based on what you have on hand, such as zucchini, kale, or sweet potatoes. Leftovers can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months.
