Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook the ground beef or chicken until it’s no longer pink. Drain any excess fat, if necessary.
- Stir in the taco seasoning and a splash of water. Add the black beans and corn, mixing everything well. Allow it to simmer for about 5 minutes.
- In a greased baking dish, add half of the tortilla chips as your bottom layer. Spread half of the meat mixture over the chips, followed by half of the cheese. Repeat the layers once more.
Baking
- Cover your baking dish with foil and bake in the preheated oven for about 20 minutes.
- Remove the foil to allow the cheese to melt properly, and bake for an additional 10 minutes.
Serving
- Remove the casserole from the oven and let it cool for a few minutes.
- Top with diced tomatoes, avocado, olives, and shredded lettuce.
- Serve warm with a dollop of sour cream if desired.
Notes
Consider substitutions like using turkey or plant-based protein. Timing is key for crunchy chips; add them on top just for the last 5 minutes of baking. Store leftovers in an airtight container for 3-4 days, or freeze individual portions.
