Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté the diced onion and red bell pepper until softened, approximately 3-5 minutes. Stir in the chopped spinach and cook until wilted. Season with salt and pepper.
- In a large bowl, whisk together the eggs and milk until well combined. Add the sautéed vegetables and half of the cheese to the mixture, stirring gently.
- Lightly grease a round baking dish. Layer two flour tortillas on the bottom, overlapping them slightly to cover. Pour half of the egg mixture over the tortillas. Repeat the layering with the remaining tortillas and filling, finishing with a sprinkle of the remaining cheese on top.
- Place the quiche in the preheated oven and bake for 30-35 minutes, or until the filling is set and the cheese is melted and bubbly.
- Once baked, let the quiche sit for a few minutes before slicing. Enjoy it warm, or let it cool for a delightful cold dish!
