  • 4 large large flour tortillas
  • 6 large large eggs
  • 1.5 cups milk
  • 1.5 cups shredded cheese (cheddar or Halal-friendly blend)
  • 2 cups fresh spinach, chopped
  • 1 unit red bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons olive oil

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced onion and red bell pepper until softened, approximately 3-5 minutes. Stir in the chopped spinach and cook until wilted. Season with salt and pepper.
  3. In a large bowl, whisk together the eggs and milk until well combined. Add the sautéed vegetables and half of the cheese to the mixture, stirring gently.
  4. Lightly grease a round baking dish. Layer two flour tortillas on the bottom, overlapping them slightly to cover. Pour half of the egg mixture over the tortillas. Repeat the layering with the remaining tortillas and filling, finishing with a sprinkle of the remaining cheese on top.
  5. Place the quiche in the preheated oven and bake for 30-35 minutes, or until the filling is set and the cheese is melted and bubbly.
  6. Once baked, let the quiche sit for a few minutes before slicing. Enjoy it warm, or let it cool for a delightful cold dish!

Notes

Feel free to mix in other vegetables, like zucchini or mushrooms, to suit your family’s taste preferences. Ensure your tortillas are large enough to fit the pan, and don’t skip the resting time at the end to help the flavors meld perfectly. Store slices in an airtight container in the refrigerator for up to three days or freeze for up to one month.
