- Peel and dice sweet potatoes, chop the onion, and mince the garlic.
Cooking
- In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Increase heat to medium-high and add ground beef. Break it up with a spatula and season with paprika, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes.
- Add diced sweet potatoes and continue cooking for another 10 minutes, stirring occasionally. Add a splash of water if necessary to help steam them faster.
- Once sweet potatoes are tender, mix everything well and taste to adjust seasoning if needed.
- Serve the mixture in bowls and sprinkle with chopped parsley for garnish.
Notes
For substitutions, use ground turkey or chicken for a leaner option, or black beans or lentils for a vegetarian dish. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
