  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 2 medium sweet potatoes, peeled and diced Cut into uniform pieces for even cooking.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 tablespoons olive oil for cooking
  • to taste Chopped parsley for garnish Use fresh parsley for best flavor.

  1. Peel and dice sweet potatoes, chop the onion, and mince the garlic.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, and cook until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Increase heat to medium-high and add ground beef. Break it up with a spatula and season with paprika, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes.
  4. Add diced sweet potatoes and continue cooking for another 10 minutes, stirring occasionally. Add a splash of water if necessary to help steam them faster.
  5. Once sweet potatoes are tender, mix everything well and taste to adjust seasoning if needed.
  6. Serve the mixture in bowls and sprinkle with chopped parsley for garnish.

Notes

For substitutions, use ground turkey or chicken for a leaner option, or black beans or lentils for a vegetarian dish. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
