Ingredients
  

Vegetables
  • 2 medium zucchinis, diced
  • 2 pieces bell peppers (any color), diced
  • 1 cup corn, fresh or frozen
  • 2 medium tomatoes, diced
  • 1 medium cucumber, diced
  • 1 medium avocado, diced
Grains and Legumes
  • 1 cup quinoa, cooked
  • 1 can chickpeas, drained and rinsed
Dairy and Fats
  • 1/2 cup feta cheese, crumbled (or omit for vegan option)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
Herbs and Seasoning
  • 1/4 cup fresh herbs (basil, parsley, cilantro), chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Begin by cooking the quinoa. Rinse 1 cup of quinoa thoroughly under cold water. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, cover, and reduce heat to low. Simmer for about 15 minutes or until all water is absorbed. Fluff with a fork and set aside to cool.
  2. While the quinoa is cooking, chop all the vegetables: dice the zucchinis, bell peppers, tomatoes, cucumber, and avocado.
Combining Ingredients
  1. In a large mixing bowl, add the cooked quinoa, chickpeas, and chopped vegetables. Gently fold in the crumbled feta cheese if using.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa mixture and toss until evenly coated.
  3. Finally, sprinkle the fresh herbs over the salad and give it one last gentle fold. Your vibrant summer dish is ready to serve!

Notes

For optimal texture, avoid overmixing your salad after adding the dressing to maintain the delightful crunch. Store leftovers in an airtight container in the refrigerator for up to 3 days and keep the dressing separate until serving.
