Assembly
- In a large baking dish, layer the sliced potatoes at the bottom. Follow with a layer of eggplants, then zucchini. Spread the lentil mixture over the vegetables, and finish with a final layer of eggplant.
- Pour the béchamel sauce generously over the top layer of veggies, ensuring everything is well coated.
