Ingredients
  

Vegetables
  • 2 pieces eggplants, sliced Sprinkle with salt and let sit to draw out moisture.
  • 2 large potatoes, sliced
  • 1 piece zucchini, sliced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 piece bell pepper, chopped
Canned Goods
  • 1 can (15 oz) lentils, drained
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
Sauce
  • 2 cups béchamel sauce (store-bought or homemade) Ensure sauce is not too runny for best texture.
Miscellaneous
  • to taste olive oil For sautéing.

  • to garnish fresh parsley For garnish before serving.

Method
 

Preparation
  1. Begin by slicing your eggplants, potatoes, and zucchini. Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out moisture, then rinse and pat dry.
  2. In a large skillet, heat some olive oil over medium heat. Add onions and bell peppers, sautéing until the onions are translucent.
  3. Next, toss in the minced garlic and drained lentils, stirring for a few moments. Add the diced tomatoes, tomato paste, oregano, and cinnamon. Simmer for about 10 minutes until flavors meld.
Assembly
  1. In a large baking dish, layer the sliced potatoes at the bottom. Follow with a layer of eggplants, then zucchini. Spread the lentil mixture over the vegetables, and finish with a final layer of eggplant.
  2. Pour the béchamel sauce generously over the top layer of veggies, ensuring everything is well coated.
Baking
  1. Preheat your oven to 350°F (175°C) and bake for about 45 minutes, until the top is golden and bubbly.
Garnish and Serve
  1. Allow the moussaka to cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy.

Notes

Store leftovers in an airtight container for up to 4 days in the refrigerator. For longer storage, freeze in a freezer-safe container for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 30 minutes.
