Method
Prepare the Vegan Bacon
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix the shredded coconut, coconut oil, smoked paprika, salt, and black pepper until all the coconut is evenly coated.
- Spread the mixture onto a baking sheet lined with parchment paper.
Bake the Coconut
- Bake in the preheated oven for about 10-15 minutes or until the coconut turns golden brown.
- Be sure to stir it halfway through to avoid burning.
- Once done, remove it from the oven and let it cool for a few moments.
Toast the Bread
- While the coconut is baking, toast your slices of bread to your desired level of crispiness.
Assemble the Sandwich
- Spread vegan mayonnaise on one side of each slice of bread.
- On two of the slices, layer on the lettuce, followed by tomato slices, the baked coconut, and peach slices.
- Cap off each sandwich with the remaining bread slices, mayo side down.
Serve and Enjoy
- Cut the sandwiches in half, serve immediately, and revel in the delightful flavors!
Notes
If using leftovers, store the coconut 'bacon' in an airtight container in the refrigerator for up to 3 days. Best to eat assembled sandwiches fresh.
