Vegan Coconut BLT Sandwich with Peaches

Ingredients
  

For the Coconut Bacon
  • 1 cup unsweetened shredded coconut Finely shredded for best texture.
  • 2 tablespoons coconut oil Melted before mixing.
  • 1 teaspoon smoked paprika Adds a smoky flavor to the coconut.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Sandwich Assembly
  • 4 slices your favorite bread (vegan) Use bread that is vegan-friendly.
  • 1 cup lettuce Romana or butter lettuce recommended.
  • 1 large tomato, sliced Fresh for best flavor.
  • 1 ripe peach, sliced Provides sweetness to the sandwich.
  • 1/4 cup vegan mayonnaise Spread on the bread.

Method
 

Prepare the Vegan Bacon
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the shredded coconut, coconut oil, smoked paprika, salt, and black pepper until all the coconut is evenly coated.
  3. Spread the mixture onto a baking sheet lined with parchment paper.
Bake the Coconut
  1. Bake in the preheated oven for about 10-15 minutes or until the coconut turns golden brown.
  2. Be sure to stir it halfway through to avoid burning.
  3. Once done, remove it from the oven and let it cool for a few moments.
Toast the Bread
  1. While the coconut is baking, toast your slices of bread to your desired level of crispiness.
Assemble the Sandwich
  1. Spread vegan mayonnaise on one side of each slice of bread.
  2. On two of the slices, layer on the lettuce, followed by tomato slices, the baked coconut, and peach slices.
  3. Cap off each sandwich with the remaining bread slices, mayo side down.
Serve and Enjoy
  1. Cut the sandwiches in half, serve immediately, and revel in the delightful flavors!

Notes

If using leftovers, store the coconut 'bacon' in an airtight container in the refrigerator for up to 3 days. Best to eat assembled sandwiches fresh.
