  • 2 cans butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium bell pepper, diced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (like parsley) for garnish

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Toss in the minced garlic and let it cook for another minute until fragrant.
  3. Stir in the diced carrot and bell pepper, cooking for another 5 minutes until they begin to soften.
  4. Next, add the drained butter beans, vegetable broth, and canned diced tomatoes to the pot. Give everything a good stir.
  5. Sprinkle in the smoked paprika, and season with salt and pepper to taste.
  6. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 15 minutes.
  7. Once ready, serve in bowls and garnish with fresh herbs for a burst of color and freshness.

Notes

If you can't find butter beans, you can swap them for navy beans or cannellini beans. For an even deeper flavor, let the stew simmer for a few extra minutes. Make sure to rinse the beans thoroughly to remove any canned flavor.
