Ingredients
  

For the filling
  • 4 pieces apples, peeled and sliced Granny Smith or Honeycrisp work beautifully for a sweet-tart contrast.
For the topping
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup almond flour
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice your apples into thin wedges. Spread them evenly in a greased baking dish.
  3. In a mixing bowl, combine oats, brown sugar, almond flour, cinnamon, melted coconut oil, maple syrup, and salt. Stir until fully combined.
  4. Evenly spread the oat mixture over the apples in the baking dish.
Baking
  1. Place the dish in the oven and bake for approximately 30 minutes or until the apples are tender and the oat topping is golden brown.
  2. Remove from the oven and allow it to cool for a few minutes before serving.

Notes

This Vegan Apple recipe is perfect for meal prep! If you have any leftovers, you can refrigerate them for up to 4 days in an airtight container. For longer storage, this dish can also be frozen for up to 3 months.
