Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 3/4 cup whole milk Can substitute with almond milk for a dairy-free version.
  • 1 teaspoon vanilla extract
Frying Ingredients
  • 4 cups vegetable oil For frying
  • Powdered sugar For dusting

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the eggs, milk, and vanilla extract.
  3. Combine the wet and dry ingredients until a soft dough forms. It’s fine if the dough is a little sticky.
Kneading and Rolling
  1. Lightly flour a clean surface and turn the dough out. Knead it gently for about 1-2 minutes.
  2. Roll out the dough to about 1/4 inch thick and cut it into squares or circles, roughly 2 inches in size.
Frying
  1. In a deep pan or fryer, heat the vegetable oil to 375°F (190°C).
  2. Carefully drop the cut dough into the hot oil, frying them for about 2-3 minutes or until golden brown on one side.
  3. Flip the beignets and fry for another 2-3 minutes until they puff up beautifully.
Serving
  1. Using a slotted spoon, remove the beignets and transfer them to a paper towel-lined plate to drain excess oil.
  2. Dust them generously with powdered sugar while they are still warm.
  3. Serve immediately on a platter.

Notes

Make sure all ingredients are at room temperature for the best results. Fry just a few beignets at a time to keep the oil temperature stable.
