Preparation
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the eggs, milk, and vanilla extract.
- Combine the wet and dry ingredients until a soft dough forms. It’s fine if the dough is a little sticky.
Kneading and Rolling
- Lightly flour a clean surface and turn the dough out. Knead it gently for about 1-2 minutes.
- Roll out the dough to about 1/4 inch thick and cut it into squares or circles, roughly 2 inches in size.
Frying
- In a deep pan or fryer, heat the vegetable oil to 375°F (190°C).
- Carefully drop the cut dough into the hot oil, frying them for about 2-3 minutes or until golden brown on one side.
- Flip the beignets and fry for another 2-3 minutes until they puff up beautifully.
Serving
- Using a slotted spoon, remove the beignets and transfer them to a paper towel-lined plate to drain excess oil.
- Dust them generously with powdered sugar while they are still warm.
- Serve immediately on a platter.
Notes
Make sure all ingredients are at room temperature for the best results. Fry just a few beignets at a time to keep the oil temperature stable.
