Ingredients
  

  • 4 lbs russet potatoes peeled and cubed
  • 1/2 cup butter softened
  • 1 cup sour cream
  • 1/2 cup heavy cream or milk
  • 2 cups shredded cheddar cheese divided
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1/4 cup chopped fresh chives optional, for garnish

Method
 

  1. Cook the Potatoes:
  2. Place the peeled and cubed potatoes in a large pot and cover them with cold water.
  3. Bring the water to a boil and cook the potatoes until tender, about 15–20 minutes.
  4. Drain the potatoes thoroughly and return them to the pot.
  5. Mash the Potatoes:
  6. Mash the cooked potatoes using a potato masher or ricer until smooth.
  7. Mix the Ingredients:
  8. Add butter, sour cream, heavy cream, 1 1/2 cups of shredded cheddar cheese, garlic powder, salt, and pepper to the mashed potatoes.
  9. Stir until everything is well combined and creamy.
  10. Assemble the Casserole:
  11. Preheat your oven to 375°F (190°C).
  12. Spread the mashed potato mixture into a greased 9x13-inch baking dish.
  13. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
  14. Bake:
  15. Bake the casserole in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.
  16. Garnish and Serve:
  17. Remove the casserole from the oven and garnish with fresh chives if desired.
