  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 teaspoon thyme Dried or fresh as preferred

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey sausage, breaking it up with a spoon, and cook until browned (about 5-7 minutes).
  3. Once the sausage is cooked through, add the chopped onion, minced garlic, sliced mushrooms, carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften.
  4. Add the chicken or vegetable broth to the pot. Stir in the thyme, salt, and pepper. Increase the heat until the soup starts to boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes.
  6. Before serving, taste the soup and adjust seasoning as needed.
  7. Ladle into bowls, and consider garnishing with additional thyme or a sprinkle of black pepper.

Notes

For an extra depth of flavor, try using fresh herbs like parsley or dill instead of dried thyme. Keep an eye on the cooking time for the vegetables to adjust to desired tenderness.
