  • 1 cup jasmine rice Rinsed under cold water
  • 1 can (13.5 oz) coconut milk Can use light coconut milk as an alternative
  • 1 cup water
  • 1 teaspoon salt
  • 1 piece lime (zest) Zest of 1 lime
  • 1 piece lime (juice) Juice of 1 lime
Garnish
  • 2 tablespoons fresh cilantro, chopped For garnish
  • to taste lime wedges For serving

Method
 

Preparation
  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, mix the rinsed rice, coconut milk, water, salt, lime zest, and lime juice.
  3. Place the saucepan over high heat and bring the mixture to a vigorous boil.
  4. Once boiling, reduce the heat to low, cover, and let simmer for about 15-20 minutes without removing the lid.
  5. After cooking, let the rice sit covered for 5 minutes before fluffing with a fork.
  6. Sprinkle chopped cilantro on top and serve warm with lime wedges on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or on the stovetop, adding a splash of coconut milk or water if needed.
