- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, mix the rinsed rice, coconut milk, water, salt, lime zest, and lime juice.
- Place the saucepan over high heat and bring the mixture to a vigorous boil.
- Once boiling, reduce the heat to low, cover, and let simmer for about 15-20 minutes without removing the lid.
- After cooking, let the rice sit covered for 5 minutes before fluffing with a fork.
- Sprinkle chopped cilantro on top and serve warm with lime wedges on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or on the stovetop, adding a splash of coconut milk or water if needed.
