Preparation
- Begin by rinsing the jasmine rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using). Stir to mix well.
Cooking
- Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover, and let the rice simmer for about 15-18 minutes, or until all the liquid is absorbed.
- Once the rice is cooked, remove it from heat but leave it covered for an additional 5 minutes. After that, fluff the rice with a fork and stir in the fresh lime juice and zest.
Serving
- Transfer the rice to a serving bowl, garnish with fresh cilantro or green onions if desired, and enjoy your Tropical Zesty Lime & Coconut Rice!
Notes
If you have leftovers, allow the rice to cool before transferring to an airtight container. It will stay fresh in the fridge for 3-4 days or can be frozen for up to a month. Reheat with a splash of water or coconut milk.
