  • 1 cup jasmine rice Rinsed under cold water
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1/4 cup fresh lime juice About 2 limes
  • 1 tablespoon lime zest
  • 1 tablespoon sugar Optional
  • 1/2 teaspoon salt
  • to taste Fresh cilantro or green onions For garnish (optional)

Method
 

Preparation
  1. Begin by rinsing the jasmine rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using). Stir to mix well.
Cooking
  1. Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover, and let the rice simmer for about 15-18 minutes, or until all the liquid is absorbed.
  2. Once the rice is cooked, remove it from heat but leave it covered for an additional 5 minutes. After that, fluff the rice with a fork and stir in the fresh lime juice and zest.
Serving
  1. Transfer the rice to a serving bowl, garnish with fresh cilantro or green onions if desired, and enjoy your Tropical Zesty Lime & Coconut Rice!

Notes

If you have leftovers, allow the rice to cool before transferring to an airtight container. It will stay fresh in the fridge for 3-4 days or can be frozen for up to a month. Reheat with a splash of water or coconut milk.
