Ingredients
  

For the crust
  • 1.5 cups crushed graham crackers
  • 0.5 cup unsweetened shredded coconut
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter, melted
For the filling
  • 1 package cream cheese, softened (8-ounce)
  • 1 cup powdered sugar
  • 1 cup crushed pineapple, drained Make sure to drain thoroughly.
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream For topping, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed graham crackers, shredded coconut, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  3. Press this mixture firmly into the bottom of a greased 8x8-inch baking dish. Bake for 10 minutes or until golden brown.
Making the Filling
  1. While the crust is cooling, beat the softened cream cheese in a bowl until smooth.
  2. Gradually add the powdered sugar, mixing well.
  3. Fold in the crushed pineapple and vanilla extract until fully combined.
Assembly & Chilling
  1. Once the crust is ready and cooled, spread the cream cheese mixture over the crust evenly.
  2. Refrigerate the assembled bars for at least 2 hours to set.
Serving
  1. Once set, slice into squares and top with whipped cream if desired. Enjoy your tropical escape!

Notes

Make sure to drain the crushed pineapple thoroughly to avoid sogginess. Don't skimp on chilling time for easy slicing. Keep an eye on the crust while baking as it can burn quickly.
