  • 1 cup orzo
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 pieces chicken sausages, sliced (make sure they’re Halal-certified)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a medium saucepan, heat the olive oil over medium heat until it shimmers.
  2. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute, stirring frequently.
  4. Add the orzo, chicken broth, and diced tomatoes to the pot. Sprinkle in the Italian seasoning, salt, and pepper.
  5. Bring to a gentle boil, then reduce to a simmer. Cover and cook for around 10 minutes or until the orzo is tender.
  6. Remove from heat and garnish with fresh basil. Serve warm.

Notes

Feel free to swap chicken sausage for turkey sausage or mushrooms for a vegetarian option. Ensure to stir occasionally to prevent sticking, and add more broth if it gets too dry.
