- In a medium saucepan, heat the olive oil over medium heat until it shimmers.
- Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for another minute, stirring frequently.
- Add the orzo, chicken broth, and diced tomatoes to the pot. Sprinkle in the Italian seasoning, salt, and pepper.
- Bring to a gentle boil, then reduce to a simmer. Cover and cook for around 10 minutes or until the orzo is tender.
- Remove from heat and garnish with fresh basil. Serve warm.
Notes
Feel free to swap chicken sausage for turkey sausage or mushrooms for a vegetarian option. Ensure to stir occasionally to prevent sticking, and add more broth if it gets too dry.
