  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn it!
  3. Next, toss in the halved cherry tomatoes and cook for about 5 minutes, stirring occasionally until they soften and release their juices.
  4. Add the drained white beans to the skillet and gently stir to combine everything. Season with salt and pepper to taste.
  5. If using, drizzle with balsamic vinegar for that tangy finish.
  6. Remove the skillet from heat and stir in the chopped basil, allowing the residual warmth to bring out the aroma.
  7. Dish out this lovely bean medley into bowls and enjoy warm.

Notes

Feel free to switch the white beans for other types like kidney or garbanzo beans. Letting the mixture sit before serving allows the flavors to meld. Avoid overcooking the tomatoes to keep their juiciness.
