Ingredients
  

Tofu Preparation
  • 1 block firm tofu Press to remove excess moisture.
  • 2 tablespoons olive oil
  • 2 tablespoons shawarma spice blend
  • to taste Salt
Wrapping and Toppings
  • 4 pieces Pita bread For wrapping.
  • 2 cups Fresh vegetables Such as lettuce, tomatoes, cucumbers.
  • to taste Tahini sauce or garlic sauce For dressing.

Method
 

Preparation
  1. Start by pressing the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes.
  2. Cut the pressed tofu into strips or cubes. In a bowl, mix olive oil, shawarma spice blend, and salt. Coat the tofu pieces well with the marinade, ensuring each piece is covered. Let it sit for around 10-15 minutes to absorb the flavors.
Cooking the Tofu
  1. Heat a non-stick skillet over medium heat. Add the marinated tofu pieces and cook for about 6-8 minutes on each side, or until they’re golden and crispy.
Preparing and Assembling
  1. While the tofu is cooking, warm the pita bread in a separate skillet or in the microwave for a few seconds until soft.
  2. Once the tofu is cooked, take your warm pita and add the tofu, then layer in the fresh vegetables. Drizzle with tahini or garlic sauce.
  3. Fold the pita over and dig in! Enjoy your crispy, homemade Tofu Shawarma.

Notes

Top tips include using tempeh or marinated mushrooms as alternatives, ensuring adequate marination time, and properly pressing tofu to avoid sogginess. Leftovers can be refrigerated for up to 3 days; reheat with a splash of olive oil to maintain crispiness.
