  • 8 oz Thai rice noodles Cook according to package instructions.
Sauce Ingredients
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
Topping Ingredients
  • 2 cups rotisserie chicken, shredded Use leftover chicken for convenience.
  • 1/4 cup chopped green onions For garnish.
  • 1/4 cup chopped peanuts For garnish.
  • Fresh cilantro For garnish.

Preparation
  1. Cook the Thai rice noodles according to package instructions. Once cooked, drain and set aside.
  2. In a bowl, whisk together the creamy peanut butter, soy sauce, lime juice, honey, minced garlic, and sesame oil until well combined.
Combine
  1. In a large mixing bowl, combine the cooked noodles and shredded rotisserie chicken, adding the peanut sauce. Toss well until everything is coated evenly.
Garnish and Serve
  1. Divide the noodles onto plates and sprinkle with chopped green onions, peanuts, and fresh cilantro for garnish.

Notes

For substitutions, try using almond butter instead of peanut butter. Avoid overcooking your noodles; they should remain al dente.
