- Slice the chicken breasts into bite-sized pieces.
- In a medium bowl, combine the peanut butter, soy sauce, honey, sesame oil, minced garlic, minced ginger, and water. Whisk until smooth and creamy.
Cooking
- In a large skillet over medium heat, add a tablespoon of cooking oil and let it heat up.
- Add the sliced chicken, cooking for about 5-7 minutes or until golden brown and cooked through.
- Once the chicken is fully cooked, lower the heat and pour the peanut sauce over the chicken. Stir well to coat all the pieces evenly.
- Let it simmer for about 2-3 minutes to allow the flavors to meld.
Serving
- Serve the Thai Peanut Chicken over a bed of steamed rice.
- Garnish with chopped green onions and chopped peanuts for that extra crunch!
Notes
For substitutions, use chicken thighs for a juicier option or tofu/tempeh for a vegetarian twist. Make sure to taste the sauce and adjust as needed.
