  • 1/4 cup soy sauce Adds umami flavor.
  • 2 tablespoons honey For sweetness.
  • 1 tablespoon sesame oil Enhances the flavor.
  • 2 cloves garlic, minced Adds aroma and taste.
  • 1 tablespoon ginger, minced Adds heat and flavor.
  • 1/4 cup water To adjust sauce consistency.
  • 1/4 cup chopped green onions For garnish.
  • to taste chopped peanuts for garnish Adds crunch.
  • as needed cooked rice for serving Serve with the dish.

Method
 

Preparation
  1. Slice the chicken breasts into bite-sized pieces.
  2. In a medium bowl, combine the peanut butter, soy sauce, honey, sesame oil, minced garlic, minced ginger, and water. Whisk until smooth and creamy.
Cooking
  1. In a large skillet over medium heat, add a tablespoon of cooking oil and let it heat up.
  2. Add the sliced chicken, cooking for about 5-7 minutes or until golden brown and cooked through.
  3. Once the chicken is fully cooked, lower the heat and pour the peanut sauce over the chicken. Stir well to coat all the pieces evenly.
  4. Let it simmer for about 2-3 minutes to allow the flavors to meld.
Serving
  1. Serve the Thai Peanut Chicken over a bed of steamed rice.
  2. Garnish with chopped green onions and chopped peanuts for that extra crunch!

Notes

For substitutions, use chicken thighs for a juicier option or tofu/tempeh for a vegetarian twist. Make sure to taste the sauce and adjust as needed.
