  • 1 lb beef, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 tbsp curry powder
  • 1 can coconut milk
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 mango, diced
  • 1 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Rice or noodles for serving

Method
 

Preparation
  1. Gather all your ingredients and ensure your beef is thinly sliced. Dice the mango and red bell pepper, and chop the cilantro.
Cooking the Beef
  1. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook for about 3-4 minutes, or until brown. Remove the beef from the skillet and set aside.
Sautéing the Vegetables
  1. In the same skillet, toss in the sliced mushrooms and bell pepper. Sauté for about 5 minutes until they soften.
Making the Sauce
  1. Reduce the heat and add the curry powder to the vegetables. Stir for about 30 seconds, then pour in the coconut milk and add the peanut butter. Stir until the sauce is well combined.
Combining Everything
  1. Return the beef to the skillet, mixing well with the sauce. Add the soy sauce and let everything simmer for another 5 minutes, allowing the flavors to meld.
Preparing the Mango Salsa
  1. In a separate bowl, gently mix the diced mango and chopped cilantro. This fresh aspect will brighten up your dish.
Serving
  1. Serve the curried beef over rice or noodles and top with the mango salsa. Enjoy!

Notes

For a different twist, substitute beef with halal chicken or tofu. Add chopped fresh chili or chili powder for more heat. Customize the salsa with diced avocado or lime juice. Don't overcook the beef to ensure tenderness.
