Ingredients
  

For the crust
  • 1/2 cup graham cracker crumbs Used for the cheesecake base
  • 1/4 cup melted butter To bind the crust together
For the filling
  • 1 cup cottage cheese Blended until smooth
  • 1/2 cup peanut butter Creamy or crunchy, your choice
  • 1/4 cup honey or maple syrup To taste
  • 1 teaspoon vanilla extract Adds flavor to the filling
Optional toppings
  • Chocolate chips or chopped nuts For additional flavor and texture

Method
 

Prepare Your Crust
  1. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs resemble wet sand.
  2. Press this mixture evenly into the bottom of a muffin tin or dessert cups. Firmly pack down the crust to ensure it holds together.
Make the Filling
  1. In another bowl, combine the cottage cheese, peanut butter, honey (or maple syrup), and vanilla extract. Mix until everything is well blended and smooth.
  2. If you don’t like chunks, blend until creamy!
Assemble
  1. Spoon the filling into the prepared crust, smoothing the top with a spatula.
  2. If desired, sprinkle your choice of toppings, like chocolate chips or nuts.
Chill
  1. Cover and refrigerate the cheesecakes for at least 2 hours to allow them to set.
Serve
  1. Once chilled, gently remove the cheesecakes from the muffin tin or cups and enjoy!

Notes

To store, keep in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month. Let them sit at room temperature for a few minutes before serving to regain texture.
