Method
Prepare Your Crust
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs resemble wet sand.
- Press this mixture evenly into the bottom of a muffin tin or dessert cups. Firmly pack down the crust to ensure it holds together.
Make the Filling
- In another bowl, combine the cottage cheese, peanut butter, honey (or maple syrup), and vanilla extract. Mix until everything is well blended and smooth.
- If you don’t like chunks, blend until creamy!
Assemble
- Spoon the filling into the prepared crust, smoothing the top with a spatula.
- If desired, sprinkle your choice of toppings, like chocolate chips or nuts.
Chill
- Cover and refrigerate the cheesecakes for at least 2 hours to allow them to set.
Serve
- Once chilled, gently remove the cheesecakes from the muffin tin or cups and enjoy!
Notes
To store, keep in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month. Let them sit at room temperature for a few minutes before serving to regain texture.
