Ingredients
  

For the Salmon
  • 2 fillets salmon fillets Fresh or thawed
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard Whole grain mustard can be used as a substitute
  • 1 tablespoon olive oil
  • to taste Salt and pepper
For the Bowls
  • 1 cup cooked rice or quinoa
  • 2 cups mixed greens
  • 1 cucumber sliced
  • 1 cup cherry tomatoes Halved
  • for garnish lemon wedges For squeezing on top

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
  3. Place the salmon fillets on a baking tray lined with parchment paper and brush the marinade generously over them.
Cooking
  1. Bake the salmon in the preheated oven for 12-15 minutes, until it flakes easily with a fork.
  2. While the salmon is baking, prepare your bowls with warm rice or quinoa at the bottom, topped with mixed greens, sliced cucumbers, and halved cherry tomatoes.
  3. Once the salmon is cooked, carefully place it on top of the vegetables.
  4. Serve with lemon wedges for added zing.

Notes

You can substitute Dijon mustard with whole grain mustard for additional texture. Store leftovers in an airtight container for up to 3 days.
