Preparation
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
- Place the salmon fillets on a baking tray lined with parchment paper and brush the marinade generously over them.
Cooking
- Bake the salmon in the preheated oven for 12-15 minutes, until it flakes easily with a fork.
- While the salmon is baking, prepare your bowls with warm rice or quinoa at the bottom, topped with mixed greens, sliced cucumbers, and halved cherry tomatoes.
- Once the salmon is cooked, carefully place it on top of the vegetables.
- Serve with lemon wedges for added zing.
Notes
You can substitute Dijon mustard with whole grain mustard for additional texture. Store leftovers in an airtight container for up to 3 days.
