  • 1/2 cup nut butter (such as almond or peanut butter) Ensure it's creamy for easier mixing.
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Preparation
  1. In a medium-sized bowl, combine the chopped dried apricots, chia seeds, and rolled oats. Stir until evenly distributed.
  2. In a separate bowl, mix the nut butter, honey (or maple syrup), vanilla extract, and salt until smooth and creamy.
  3. Pour the wet mixture into the dry ingredients and mix thoroughly. It's best to use your hands to ensure everything is combined well.
  4. Line an 8x8-inch baking dish with parchment paper, leaving a bit of overhang for easy removal. Pour the mixture into the dish and press it down evenly.
  5. Cover the dish and place it in the refrigerator for at least 2 hours to allow it to set.
  6. Once set, lift the mixture out of the dish using the parchment paper and cut it into bars. Enjoy immediately or store for later!

Notes

These bars can be stored in the refrigerator for up to two weeks or frozen for up to three months. Thaw at room temperature or microwave for a few seconds for gooey texture.
